The most popular pear

The Williams-Christ is certainly one of the most popular pear varieties of all, not only when it comes to eating, but also when it comes to distilling schnapps. Its incomparable flavour is clearly distinguishable from other varieties, even for inexperienced schnapps connoisseurs. Combined with a fine wooden barrel note, the result is a very special speciality: the Old Williams pear.

Golden-yellow fruits with an intense flavour

Only sun-drenched fruits of the best quality, which have ripened under optimal climatic conditions, are used to produce our fine Williams distillate. Our fruit growers usually harvest the pears in August and September. When delivered to Obsthof, we check them for their degree of ripeness; the white flesh should be tender but not mushy. Once we are satisfied, the pears are pitted and de-stemmed, then we mash them and let them ferment.

Sophisticated process

The nose for the right timing of the individual processing steps is very important with the Williams-Christ pear as even small mistakes have an effect on the subsequent taste. The distillation process, therefore, requires special skill and a lot of experience. Our master distillers use a gentle raw and fine distillation process to ensure that the delicate, multi-layered aromas of the fruit are fully transferred into the distillate – the starting point for our "Old Willi".

Old Williams Pear Schnapps, with a barrel character

After being stored in stoneware, the fine distillate is put into a wooden barrel for several months. The type of wood used is crucial to the taste – it's the only way to use the barrel to enhance the character of the Old Williams Pear without overpowering the fruit's own aromas. These aromas are always found in the nose – multi-layered, intense and varietally characteristic. These sensations continue on the palate and in the finish, where the full-bodied yet smooth taste of the fruit is paired with a subtle sweetness and pleasant tart-spicy notes. A really pleasurable experience!

 Drinking recommendation: Enjoy Old Williams Pear as a digestif, between courses or or in a cosy get-together - just as you please. The fruit's flavours develop particularly well in a Schnapps Glass with a stem at a temperature between 17 and 21 °C.
