Premium brandies of the highest quality

Only hand-sorted fruit with a distinctive varietal character, sourced from the best vineyards, is processed for our Hafele. In a single-mash process, we remove the stalks, seeds and skins, obtaining a pure fruit puree.

This is then fermented under optimal temperature conditions in special fermentation tanks before being distilled in custom-made, low-temperature vacuum stills. Two to three rounds of the distillation process are usually necessary in order to perfectly separate the distillate into head, heart and tail.

Using only the heart, the distillate is then stored for 18 to 72 months in vessels of various materials. Stoneware storage has a particularly strong influence on the maturation and character of the products.

The fine-pored structure of the vessels allows them to "breathe" so that the aroma can optimally develop. The distillates are only finished or, more precisely, considered fully mature when they have passed inspection by at least five experts. To do so, they have to be highly aromatic and pure with a typical varietal character. Only then do we dilute them to drinking strength with spring water to offer an unbeatable enjoyment experience
