If you like to eat fresh raspberries, then you will love the Prinz Himbeerla Raspberry Schnapps. For this 34 % vol raspberry schnapps, we use hand-sorted raspberries from the best growing areas. The red berries get the perfect amount of sun in forest clearings and on the edge of woodlands, ripening into juicy, aromatic fruits. Thanks to our four generations of experience, we know where the finest raspberries grow and which ones are best suited for making our schnapps.

Our fruit experts at the Leiblachtal Obsthof on Lake Constance check these delicate berries with the utmost care. Appearance, feel, smell, taste, sugar-fruit-acid ratio and other quality criteria must be just right so that we only process ripe, high-quality raspberries. We wash the hand-sorted berries and prepare them immediately, according to Prinz's own method.

Combining 130 years of experience in traditional fruit preparation with modern technology, we puree the fragrant raspberries in a special machine then pass them through a fine sieve. This is how we remove the small bitter raspberry seeds in order to produce an aromatic pulp. This pulp is then mixed with alcohol to extract the characteristic flavours. The resulting fruity, intensely fragrant alcohol mixture is called raspberry-macerate.

Gently distilled and ideally matured

We distil the raspberry-macerate in a raw and fine distillation process to produce a distillate that contains the full character of the raspberry. This is where our distilling skills, four generations of experience and modern technology come into play. We use an ultra-modern vacuum process that allows us to distil at an 30 °C lower temperature than usual; conventional stills cannot do this, as they have to distil at a minimum of 78.4°C. With the Prinz process, however, we can preserve the heat-sensitive aroma components of the raspberry distillate, which is the basis for the full, varietal taste of our Himbeerla Raspberry Schnapps.

And now we wait! To fully develop the raspberry aroma, we store the distillate for two to three years in large stoneware vessels in our 130-year-old distillery cellar. With its stable, cool temperatures, this gives the optimal conditions for maturing. After this resting period, we reduce the raspberry distillate to the drinking strength of 34 % vol, using pure water. Only then do we bottle the Himbeerla Raspberry Schnapps.
